SUNDAY RECIPE AND RANDOM TABLESCAPES

Happy Sunday .  Hope you went to the church of your choice today.  We've had lots and lots and lots of dreary days  for sometime now.  Did see the sunshine  yesterday, but it has vanished again today.  Having said this, I feel like we may need some comfort food here,; I am posting my mother's flour tortilla chicken and dumplins recipe. It is so, so yummy and easy as pie to make (well some pies aren't that easy I know). But trust me, this is easy, easy, easy.  Great for a quick dreary day meal, pot luck dish, or just anytime.


Momma's Tortilla Chicken and Dumplins
Ingredients:
4 chicken breasts (boiled)  in 1 l/2 qt water - retain the broth
4 chicken boullion cubes
l/4 cup butter or margarine (I use Country Crock lite)
l pkg. 8-10 flour tortillas
l can cream of chicken soup
l/4 tsp salt
l/4 tsp pepper
remove chicken breasts from broth.  Add boullion and dissolve.  Bring to boil,  add cream of chicken soup  and butter or margarine. stir until thoroughly mixed.  Tear or shred chicken breasts into small pieces and add to broth mixture.  slowly tear small strips of the tortillas and drop them into the  broth mixture.  add salt and pepper.  Cook  for an additional 10 to 15 min. on med heat.  Let stand for about 10 more minutes at least.  You can always add more butter if you feel it is necessary.  Serve up piping hot and Enjoy.

 I injected non-traditional decor this year, using aqua and peacock.  It was so much fun
